We created this spicy salsa for all of the folks out there who like their salsa really, really hot. We used the hottest of all chilies - the habanero - along with jalapenos and chilepequins and created an incredible, all natural, gluten-free salsa that's hotter than the Texas sun! Most folks arent accustomed to a nice little slap of perfectly roasted garlic in their salsa. We add roasted tomatoes, serrano chiles and some other secret ingredients to make this hands-down winner. Great with tortilla chips, or try it on roasted chicken or grilled or baked veggies. Moderately high heat.

Many folks think that tomatillos are just green, unripe tomatoes, but thats just wrong. Theyre a vegetable with its own separate identity. When you find them in the produce section at the supermarket theyre still in their crispy, tan husks, which must be removed before theyre used. Tomatillos make a great salsa. Youll agree when you taste ours. We add some charred tomatoes and Serrano chiles, plus a handful of cilantro to make a taste thats mighty pleasing on a corn chip. Great on baked potatoes and grilled fish too.
